One of my favorite summer fruits has to be strawberries! I love the sweetness and versatility of them, you can put them in so many things from desserts to sauces to, of course, salads! And that’s what I’m here to show you today. Sometimes the best way to celebrate fresh, tasty strawberries is to keep them as is and allow them to lend their sweetness to a salad. This Strawberry Avocado Salad is refreshing, vibrant, and coated in a tangy, sweet Honey Balsamic Vinaigrette. Now, that’s enough describing the salad let’s get started with the recipe, shall we?

Ingredients:

For Salad:

  • 15 strawberries
  • 5 oz. spring mix
  • 1 cucumber
  • 2 avocados
  • 1 – 2 tablespoons feta cheese, crumbled
  • 1/2 cup dried cranberries + 1 tablespoon, garnish
  • 1 tangerine, separated

For Honey Balsamic Vinaigrette:

  • 1/2 – 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • salt, to taste

Directions:

I typically buy large 11 oz. packages of spring mix and I just think they are so convenient because they’re already washed, dried and ready to be used! Plus I love the variety of greens you have in one place. For this salad I just use half the package (you don’t need to be exact – more or less salad won’t hurt anybody hahaha). I prefer the leaves to be a little smaller just because it’s easier to eat so to prepare the greens just stack a handful of leaves on top of each other and then fold them in half and cut into one or two parts. Do this with all the leaves and add into your salad bowl. For the cucumber cut in half to make it shorter and then cut in half lengthwise twice. Then simply slice the cucumbers thinly into quarters.

For the avocados, cut in half and remove the pit and scoop out each half. Cut the halves into cubes and then add one of the avocados into salad bowl. Leave the other half to garnish on top of salad at the end. Now, it’s time for the star of the show!! The strawberries 🤩 Oh, you thought you were the star of the show? Well, you are – just a different show. We can let the strawberries have this one. Wash and dry the strawberries and remove the leaves and stem with a small pairing knife. Thinly slice them and add 10 strawberries worth into the salad bowl and leave a the rest of the slices behind to throw on top for garnish.

Add the dried cranberries and tangerine slices into the bowl and toss! Mix together the vinaigrette ingredients in a jar and drizzle a few spoons onto the salad and toss to coat everything. You can store the leftover vinaigrette in the refrigerator. After tossing the salad many of the heavy ingredients will get lost in the greens so on top add the remaining strawberry slices and avocado you set aside on top, as well as a tablespoon of dried cranberries.

When it’s time to serve sprinkle some crumbled feta on top and just enjoy! I love how vibrant this salad is and the strawberries add a beautiful sweetness you don’t normally get in salads.

Strawberry Avocado Salad

For Salad:

  • 15 strawberries

  • ½ cup dried cranberries + 1 tablespoon, garnish
  • 1 tangerine,   separated

For Honey Balsamic Vinaigrette:

  • ½-¾ cup olive oil
  • ¼ cup balsamic vinegar
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • salt, to taste

Instructions
 

  • Stack a handful of greens on top of each other, fold in half and cut in thirds. Do with all the greens to help make them smaller and add into salad bowl.
  • Cut your cucumber in half lengthwise twice until you have 4 strips, then cut into thin slices and add into salad bowl.
  • Prepare one avocado by cutting in half, removing pit and cutting into cubes. Leave the other avocado to place on top of salad.
  • Wash and dry the strawberries. Remove the leaves and stem and slice thinly. Put about 10 strawberries worth of strawberries into salad bowl and leave 5 strawberries worth of slices out for topping salad.
  • Add in ½ cup dried cranberries. Add in tangerine slices and then toss salad to mix everything well.
  • In a jar add in vinaigrette ingredients and shake well to combine. Drizzle a few spoonfuls onto salad and toss again to coat salad.
  • For garnish add in remaining strawberry slices, slice second avocado and fan slices on top of salad, sprinkle 1 tablespoon of dried cranberries, and crumbled feta cheese on top.
