Chicken Salad Sandwiches are great if you want a quick, delicious lunch. Everyone has their own version and of course, mine has just a little hint of spice. I used to make these all the time growing up and the recipe has stuck with me ever since. Probably because it’s so quick and easy to make and it being quite enjoyable to eat doesn’t hurt. With the subtle tang of mayonnaise, hint of spice, and crisp of coleslaw the chicken salad filling goes perfectly with some fresh, thin slices of garden tomatoes on a hearty slice of bread. But that’s enough describing it, how about making it? Let’s get started with the recipe, shall we?

Ingredients:

  • 1/2 pound poached, boneless chicken
  • 1/2 teaspoon minced garlic
  • 1 teaspoon cumin powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon Pakistani red chili powder
  • 1 teaspoon chaat ka masala
  • 1 teaspoon ground black pepper
  • 3 cups cole slaw mix
  • 1/2 cup mayonnaise
  • Fresh garden tomato slices
  • Leaf lettuce
  • 12 slices of hearty bread

Directions:
The great thing about chicken sandwiches is that it’s a great way to use up leftovers you may have or of course, you can make it fresh. I usually use poached chicken that is cooked in slightly salted water and minced garlic. Once it’s cooked, drain the chicken and place in a large bowl. Shred the chicken with some forks then add in all the spices, salt, and black pepper.

Mix the spices thoroughly until the chicken is coated and shredded to your liking. At this point add in the cole slaw mix (usually with at least red and green cabbage, and carrots) and mix completely in the chicken until the cole slaw softens slightly and combines with the chicken. Lastly, just mix in the mayonnaise and you’re done with the filling!

To assemble the sandwich use your favorite hearty bread. I like it with something thick and soft that’s a nice contrast with the crisp, fresh filling. You can optimally lay down some leaf lettuce, then the filling, and finally some fresh, thin slices of heirloom tomatoes.

Ingredients
  

  • ½ pound poached, boneless chicken

  • 1 teaspoon cumin powder
  • ¼ teaspoon salt
  • teaspoon Pakistani red chili powder
  • 1 teaspoon chaat ka masala
  • 1 teaspoon ground black pepper
  • 3 cups cole slaw mix
  • ½ cup mayonnaise
  • Fresh garden tomato slices
  • Leaf lettuce
  • 12 slices of hearty bread

Instructions
 

  • Poach chicken in salted, boiling water with minced garlic until cooked completely.
  • Place cooked chicken in large bowl and shred with forks and mix in the spices, salt, and black pepper.
  • Mix in the cole slaw thoroughly until slightly softened and then add in the mayonnaise
  • Mix everything together thoroughly to finish filling.
  • To assemble sandwich place lettuce on slice of bread, chicken salad filling, and thin tomato slices. Cut sandwhich in half and serve
  • Enjoy!
