Well hello everybody! Summer is almost upon us and one of the best ways to beat the heat on those hot summer days is with a cold, refreshing drink. Well, it’s one way, at least. I, personally, think it’s a great way. But what to drink? This is the real question! I’m here to give you that answer. You see, since the dawn of time, give a few billion years, Pakistanis have been drinking the ever famous Mango Lassi to keep cool. Lassi is a sweet (or salty in some cases) yogurt drink that I would consider a Pakistani smoothie. Since Pakistan has some of the most delicious mangos, naturally, there is a Mango Lassi. It’s quick and easy to make and oh so delicious. Let’s get started with the recipe, shall we?

Ingredients:

  • 1/2 cup fresh mango
  • 1/2 cup plain yogurt
  • 1 cup milk
  • 1-2 teaspoon sugar (optional)

Directions:

I suppose there is some debate on the milk to yogurt ratio for Lassi. Obviously, the more yogurt you use the thicker the Lassi will be. I like a 2:1 ratio for milk:yogurt while others might flip that ratio. I would recommend trying both to see what you prefer.

Moving right along, start by preparing one large mango. If you can get in season, ripe mangoes those are best. If you can’t frozen mangoes will do but you may have to use more sugar because they won’t be as sweet as a fresh mango. Cut all the sides of the mango and simply score with a knife into a grid pattern. Flip the peel upwards to make the flesh of the mango protrude. Then you can easily cut them off using a knife. It just makes things a little cleaner and easier to handle.

A tip about getting all the pulp off the pit; using a knife just scrape along the pit and it will come off petty cleanly until you have almost nothing left on it. Once you get all the mango cut you’ll have about a cup of fresh mango. You can use half of this for one serving. In a blender put all the ingredients along with the 1/2 cup mango. Blend until smooth, about 2 minutes.

Then it’s done! It really is just that simple. Depending on your mango taste for sweetness and adjust to your liking. Some people like to serve with ice but I think if you’re using cold milk and yogurt it’s usually cold enough.

Ingredients
  

  • ½ cup fresh mango or frozen
  • ½ cup plain yogurt
  • 1 cup milk
  • 1-2 teaspoons sugar (optional)

Instructions
 

  • Peel and cut 1 ripe mango. Set aside ½ cup.
  • Blend together mango, milk, and yogurt. Taste for sweetness and add sugar if necessary.
  • Add ice, optionally. Serve immediately!
  • Enjoy!
