Welcome welcome, to another exciting recipe at Mostly Masala. It’s going to be a fun time, that’s a guarantee that I guarantee. Have you been convinced? I’m sure you have 😁 These crisp baked zucchini rounds are fragrant, flavorful, and have just a hint of spice. They’re a perfect side to any entree or just alone as a snack.
Ingredients:
- 2 zucchinis
- 1 tablespoon cumin powder
- 2 teaspoon red chile powder
- ground black pepper, sprinkled
- Salt, to taste
- Olive oil, drizzled
Directions:
First things first, preheat your oven to 425F. Then lets make those zucchini rounds. Pretty simple because, I don’t know if you know this, zucchinis happen to be in a cylindrical shape. Makes things easy.
Once you have them in rounds you can go ahead and lay them on a sheet pan lined with parchment paper or aluminum foil and then drizzle them with olive oil. Afterwards sprinkle on all the spices and salt. Mix it all up, making sure to cover both sides of the zucchini.
Now its time to bake! Just put them on the middle rack of your oven and let them bake for 25 minutes. And for my next trick…I will make the zucchini shrink to half its size. ✨POOF✨

Baked Masala Zucchini Rounds
Ingredients
- 2 zucchinis
- 1 tablespoon cumin powder
- 2 teaspoon Pakistani red chili powder
- ground black pepper sprinkled
- Salt to taste
- Olive oil drizzled
Instructions
- Preheat oven to 425°F.
- Slice zucchini into rounds.
- Lay them flat on parchment paper or aluminum foil lined sheet pan.
- Drizzle with olive oil and sprinkle on all the spices and salt.
- Mix them all up thoroughly coating each round on both sides.
- Lay them flat again so no pieces are overlapping.
- Roast in the oven for 25 minutes on middle rack.
- Enjoy!
